A busy gal’s guide to cooking
These quick recipes will have you making a feast for one in no time

The biggest mistakes people make when they start cooking for themselves is that they spend too much money, waste a ton of time, make too much food, and prepare meals that they’re only going to eat once. Who grew up eating chicken Florentine every day, anyway?
Most people have foods they eat on a regular basis — even if it's just mac and cheese. After living on my own for about five years, it's only been in the last year that I've really learned how to make great single portion meals for myself using little tricks I've picked up here and there. Women cooking for themselves shouldn't be relegated to eating prepackaged microwave foods, sandwiches, or huge meals that turn into the leftovers that last a lifetime.
So get ready for three recipes that can be made in under 20 minutes that will totally work for any working girl’s table of one.
Breakfast: Apple and cinnamon oatmeal
Ingredients:
1/2 cup of instant oatmeal
1/2 cup of apple juice
cinnamon
Directions:
Cook oatmeal according to package direction substituting the liquid
with apple juice. Add cinnamon to taste. The nice thing about using
apple juice that it sweetens the oats for you, which means there’s no
need to grab the sugar.
TIP: If you feel like punching up the oatmeal even more, try cranberry juice instead of apple juice.
Lunch: Salmon patties
Ingredients:
1 can of salmon (You can find it in the canned tuna aisle)
1/4 cup of garlic and herb bread crumbs
1 egg
olive oil
1/4 teaspoon black pepper
salt to taste
English muffin (optional)
Directions:
This recipe yields two salmon patties. Drain the liquid from the can of
salmon and put the salmon in a bowl. Mix the salmon with the bread
crumbs, egg, salt, and pepper. Form two patties from the mixture.
Coat a small pan with olive oil and heat it. Cook the patties on each side for three minutes on medium heat or until you get the desired crispiness. OPTIONAL: You can eat the patties by themselves or put some butter on an English muffin and have it like a salmon burger.
Dinner: Vegetarian Picadillo
Ingredients:
1 cup Morning Star Griller’s Recipe Crumbles
4 cloves of garlic minced
1/4 small onion chopped
1/2 red or green bell pepper chopped
1/4 teaspoon garlic salt
olive oil
1/2 cup of cooked instant white rice
Directions:
Picadillo is a Cuban dish normally consisting of ground beef, garlic
and onions. Cook rice according to package directions and set aside.
Take minced garlic, onion, and pepper and sauté in olive oil until
onion is translucent (about 3-4 minutes). Add the Morning Star
Griller’s Recipe Crumbles and more olive oil depending on how dry the
crumbles are (just eyeball it). Add the garlic salt and cook until
“meat” is heated through or to desired crispiness. Serve the picadillo
with the rice.
TIP: Don’t be shy with the garlic. If you like it, throw a few more cloves in the fire! Also, this dish goes very well with black beans, so make sure to add that as a side, as well.
